How to make cassava!
The leadership in public health program is not just about learning the public health system in developing countries like the Dominican Republic; it's also about learning the beautiful country's culture and history, which can always be tied back to food. Today, we went to Casabi, a company that makes cassava, and we got to see each process in how they make cassava. Cassava is baked slices of yuca in Spanish or yam in English. Cassava is an important snack and side dish in the Dominican Republic because their oldest food product that the native Taino people made for everyday food.
